Ingredients
  

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream

Instructions
 

  • If using fresh corn, cut the kernels off the cob. If using frozen or canned corn, measure out 4 cups.
  • In a large pot, combine the corn and broth. Bring to a boil over medium-high heat, then reduce the heat and simmer for 10 minutes.
  • Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches, blend until smooth, and then return it to the pot.
  • Stir in the heavy cream and heat the soup gently over low heat until warmed through. Do not boil.
  • Ladle the soup into bowls and serve hot.
