- 4 cups corn kernels (fresh, frozen, or canned)
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
If using fresh corn, cut the kernels off the cob. If using frozen or canned corn, measure out 4 cups.
In a large pot, combine the corn and broth. Bring to a boil over medium-high heat, then reduce the heat and simmer for 10 minutes.
Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches, blend until smooth, and then return it to the pot.
Stir in the heavy cream and heat the soup gently over low heat until warmed through. Do not boil.
